How to make Pickled Red Beets
I never liked beets. A friend of mine made this recipe and I tasted hers. Never thinking I would like them. Well she proved me wrong. The beets tasted great.
I am glad I tried them because I have read that beets are very good for you. You can also use this recipe to make pickled eggs.
I used pint sized Mason Jars.
PICKLED RED BEETS
20 - Med. size red beets
2 1/2 cups vinegar
2 1/2 cups beet juice
1 cup sugar
2 tsp. canning salt
10 whole cloves
2 cinnamon sticks
Scrub beets and remove the tops. Leave about half inch of tops and root, to be removed later. Cook until tender. About 20 - 25 mins. Drain and save the beet juice. Remove the tops , roots and skins, cut into chunks.
Combine vinegar, juice, sugar and spices. Bring to a boil. Remove spices. Add beet chuncks and boil again. Pour into jars and seal.
You can add onion slices to the jars too if you like.
If you prefer you can put into canner for 30 mins.

Hello, I swear I never liked beets. Then i ate them this way. Now I can sit and eat the whole jar! My son was the same way about beets. I opened one of my jars, he ate the whole thing and took one home. lol
Mom I like beets never had them pickled tho I like them like with umm just salt on them I think they are very earthy tasting. I never ate a pickled egg either it just seems funky to me. The first time I had a beet was in school and I had no choice but to try it but since then I buy them all the time and eat them right out of the can.

I simply love pickled beets. When I can't get them I make my version of quick pickled beets. Throw and can of beets on the stove with vinegar, sugar, onion and a little salt. Thanks for the recipe for the real thing!
Hi, I must admit I hate them! lol but maybe this way the might taste nicer, I don't know why I don't like them, I even tried them the other day just to make sure that I remembered them properly, but i still hated them, but you never know this could be the way to try them, thanks for the info, cheers nell
Oh that looks/sounds fantastic! I love beets - in fact am trying to grow some in our one-second growing season here in Central Oregon! Between Griffin the malamute and the freezing temps at night, I hope I have a prayer. I haven't canned in years but that looks like a mighty great reason to go back to it!

Hi, Tina, I have a funny story for you. i had a friend who went to live in America a few years ago. Talk about an English women abroad! ha ha she went to somewhere in Upstate New York, that's what reminded me!, and her husband went fishing, he was wearing waders to keep his legs dry, but she, pregnant as well, walked into the river in a inoccence and there were snakes going around her legs! when she got back to the place they were staying, the owner asked if she had a good day, when she told him about the snakes he went white! and said they were poisonous! can't remember what they were called, maybe water moccasins? and he looked at her as if she was mad! she was, she was English! hee hee so there you go, funny story of the day! ha ha

granny I havent canned in whle and that was with water bath what a fiasco that was...this sounds much easier and beets are still reasonable here at the desert farmer market...may have to try my hand at it.. thanks and this one is bookmarked as they say :)
My wife never liked them either until I came along. Seems no one before me knew how to do them properly. Also I turned her onto Harvard style, the best. Love beets.

RNMSN, thank you for stopping. Canning is so easy. I can everything I can get my hands on. Things don't get eaten up as fast since all the kids are out of the house. This is great for making food last longer. And when they stop I always have something on hand to heat up!

i make my own pickeled egg try useing 2 cups vinegar 2 cups sugar and 2 cans beets bring to boil on stove .boil eggs deshell and pour hot liquid over eggs in glass jar let cool and put in frig for few days taste grate
country, I just use the same juice I use yo make the beets with.
